Located on the exceptional terroir of the Sainte Victoire mountain, where vines have been cultivated since Antiquity, Château Coussin acquired in 1903 by Jean-Baptiste Gautier is today the property of his descendants Olivier and Sophie Sumeire.

Terroir
Clay-limestone made up of ancient gravelly alluvial deposits, remains of a huge alluvial cone from the streams descending Mont Sainte Victoire (1,010 meters) and bordered to the south by Mont Olympe and Mont Aurélien.

 

Vineyard
Average age of vines 30 years. Grape varieties: Grenache 60% Syrah 40% Yield: 50 hl/ha. Sustainable farming. Vegan. Classified "high environnemental value"

 

Vinification
18 days of cold tank stabilisation at 4° C in pre-fermentation phase, then temperature-controlled fermentation in stainless steel vats.

 

Tasting notes
Very pale color with silver highlights. Fine and elegant nose of wild woodland strawberry embellished with acacia flowers. Ample and fresh palate with notes of orange and pink grapefruit, with a delicate peppermint finish.

 

Matching food & wine
Tuna and coriander tartar, ceviches, seafood risotto, lamb confit with garlic and thyme.
